Cognac
Cognac is made from grapes that come from controlled cultivation in the French region of Cognac. The wine made from these grapes is defined as cognac through double distillation and subsequent barrel aging.
The length of maturation has an influence on the quality of the subsequent spirit.
Cognac is divided into different categories based on age:
- In the case of VS, the youngest component is at least two years old, the average age is four to five years.
- In the VSOP, the youngest component is at least four years old, the average age is five to ten years.
- In the XO, the youngest member is at least ten years old, the average age is twenty to forty years.
